The Eat at State ON-THE-GO Food Truck is continuing its partnership with the MSU Campus Archaeology Program in March and April. Special historic menu items will be available during Throwback Thursday events on Thursday, March 29 and Thursday, April 19 at The Rock near the MSU Auditorium and Flashback Friday events on Friday, April 13 and Friday, April 27 at 1855 Place.
In addition to a Ginger Cake dessert option from MSU Bakers, diners will find Potato Croquette with Chow-chow, Pressed Beef Epigram, a Smoked Chicken Drumstick with skewered Herb-roasted Red Skin Potatoes and other 1860s-style items on the menus.
Last spring, the Food Truck team and Campus Archaeology staff collaborated on a 1860s-inspired meal based on archaeological and archival research to test recipes and sample items with guests from across campus.
